300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, serving 10)

150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Cordial: Place every components inside a pan, bring to a gentle boil, mixing until the sugar dissolves. After that, turn off the burner and leave to reach room temperature fully. Transfer into a sealable bottle, close it and refrigerate it in the fridge, where it will keep for up to four weeks.

Preparing the Premix: Pour the specified liquids into one big jug, let it rest for one hour, then filter it best through muslin, so it's perfectly clear.

To serve: Add 85ml of your cocktail base into a mixing glass containing ice, and stir gently for one minute until cold. Pour to a chilled martini glass or a similar vessel, garnish with a few cranberries and finish with a brief mist of mandarin oil over the top.
